Alice’s take on Chardonnay from Domaine du Pélican. Half of the grapes were pressed immediately, while the remainder fermented as whole bunches for a month and a half. Pressed off to cuve, it was bottled after a year of élevage. A little reduced on opening, with air emerges a unique Chardonnay, plush with ripe stone fruits and a hint of spice.
